GEORGIA CUISINE

The cuisine is where the whole hospitality ad love of this nation toward other people is vivid! In the case of being invited to a Georgian table (Supra), the most important thing for the host family is that their guests leave the table full and happy. Like in the example of wine, Georgian cuisine is also a representative of the ancient nation’s culture, traditions, and history. Many cultures try to reproduce what Georgians have created in terms of flavors-but the best experience would be to visit the country of the origin itself and try to get everything this culture has to offer!

KHINKALI

Khinkali is one of the most famous Georgian dishes made with a variety of fillings-from lamb to beef and pork. There is no exact information about the origins of Khinkali. Some say it comes from a Tatar influence, others claim that this beloved dish is a product of Georgian mountain culture. Khinkali can be cooked either with meat, mushrooms, cheese, or even potato. Despite how You make it, your final product must be juicy. The right way to eat the dish is with hands. First of all, You have to take a small bite (take a time to enjoy the juice inside!) and then degust the whole thing!

KHACHAPURI

Another dish that is always present at every Georgian table is Khachapuri made of bread and cheese. From region to region, the methods of cooking Khachapuri deffer: in some places the crust is thin, while in other regions people prefer a thicker one. The same goes for the shape of Khachapuri: it can be round, triangular, or rectangular. Despite of the shape, Khachapuri is a true representation of the unique skills and delicate approach that Georgians use in their cuisine. As an alternative to bread and cheese combination, Georgians suggest Lobiani. Unlike Khachapuri, Lobiani is a bean-stuffed bread for those who may have other culinary preferences. Lobiani is typically quite moist and can be a perfect choice for those who possess a healthy diet.

PKHALI

Pkhali is another traditional Georgian dish. Most popular version of pkhali is made with spinach and beets. Important to note: if You are a vegetarian, this is a must-try for You! Pkhali is a cold appetizer which consists of chopped vegetables combined with walnuts, herbs, onions, and garlic.

SATSIVI

Satsivi is another must-try! It’s a walnut sauce which may have turkey, chicken, or fish inside. Satsivi is always present on Georgian Christmas table.

ELARJI

Elarji is a mouthwatering dish coming from Georgian region Samegrelo, which has a full potential of blowing your mind! It consists of a roughly milled cornflour and a cheese boiled together. From ancient times, Elarji was considered an aristocratic dish made for respected guests.

EGGPLANT WALNUT ROLLS

Eggplant walnut roll is another cold appetizer. It’s a vegetarian dish often served with Pkhali. It is made with fried eggplant and spiced walnut rolled together.

CHAKAPULI

Chakapuli is another unforgettable Georgian dish. Chakapuli is traditionally made with lamb, tarragon leaves, cherry plums, or cherry plum sauce called Tkemali, dried white wine, herbs, and garlic.

CHIKHIRTMA

Chikhirtma is a traditional Georgian soup which is well-known as a hangover cure! The main ingredient is chicken cooked with vinegar, egg, flour, and onion.

KHARCHO

Another famous Georgian soup is Kharcho! The main ingredients are beef, rice, and Tkemali.

BEAN SERVED IN A SMALL CLAY JAR

Another delicious appetizer specially made for vegetarians is the bean served in a small clay jar. This must-have dish is often served with pickles.
